Realizing this amazing pork was the byproduct of a process, I decided to duplicate it at home. This only requires two ingredients, and a smoker. 

The canister centered in the photo is the “Magic Dust” for this process…

Simply cover a ham with this incredible spice blend, then smoke it for a few hours at 275 degrees. Fix up your eggs to your liking, and add a roasted version of a potato.
